I'm big enough to admit when I'm wrong. I need to rethink squash. I've eaten it of course. I don't hate it I just don't love it. I'm talking the hard winter squashes, not summer squash and zucchini. I have always eaten some kind of squash with Thanksgiving meal and usually Christmas. More tradition then craving. I am changing my tune now though. Over mofo with all these amazing looking recipes featuring soooo many squishes, I mean squashes. So I decided to try one. It's actually not from a mofoer but some mofos have tried it and verified it's deliciousness so I trusted and went for it.
With one carnival squash at hand I made Vegan Yum Yum's Squash Bisque. Yes I was using a different squash than was called for. Yes I had to scale down the recipe because I only had about 1 lb of squash. Luckily the recipe is all embracing, or very forgiving. It can be both can't it?

So you need dessert too don't you? Lex though I was making too many chocolate desserts. I that even possible? Well just to satisfy him I threw together some non chocolate cookies tonight. The oatmeal raisin cookies from Eat Drink Be Vegan.
This woman knows cookies! I like that most of the recipes (as in, the ones I've made so far) make one sheet of cookies. They are truly quick recipes.

I agree about the cookies--Dreena Burton's Homestyle Chocolate Chip Cookies are one of my favorite cookie recipes ever.
Those cookies look really good! Funny, AA thinks that a dessert isn't worth it if it's NOT chocolate. So if I want to make a dessert that's not chocolate, I usually don't run it by him, cause he'd most likely say "eh." But of course, he'll eat it and like it!
I love oatmeal cookies and should make them soon. It's been forever!
I go in an out of squash love. I'm not a giant fan of a big squash stuffed with stuff. People always want to feed vegans that. But it's too overwhelming for me!

I also had to rethink winter squash. I has never been on my menu until I became vegan. And now I am a big fan of butternut squashes. The soup looks very appealing.

isn't that soup AMAZING? everyone i know that's tried it loves it, and that includes my omnivore parents. i might make it again soon... oh, and you're so right about the cookie recipes in ED&BV. i made 2 kinds and they've both been so so good. yum!
Hooray for your squash bisque! I love squash, but I'm often too lazy to prepare it. I've done it recently, but it's not my favorite thing to do in the kitchen!
Great looking cookies! Don't you hate recipes that yield "6 dozen cookies". One sheet of cookies is perfect!

oh yeah! I'm finally catching up on old mofo posts I didn't get around to reading. The soup looks lovely. I'll definitely give it a go. Also, I totally agree with you about Dreena's cookies: always quick, never too many cookies, and always tasty! Hers are pretty much the only cookies I make anymore.
