Favorite Pot Luck Dish

Everyone needs one. A go-to dish. Something you can make just a little of or vatloads of. Something you can share with people of varying tastes and eating habits. Something you can eat when you are at the omni or "vegetarian" pot luck and there isn't a thing you can eat because even the vegetable dishes are covered in cheese.

I first made this dish for a little get together for a friend who was in town for a short time. The inspiration for this recipe came from La Dolce Vegan! I haven't made much from this book but this was a lucky find. This is an easily modified dish and it's quick to put together. We were two of three vegetarians at this get together and everyone loved these beans. Like, loved them so much I almost didn't get any.

Sorry for the poor looking food quality. I used beans that I had over cooked so they were a little too soft to begin with but this still tasted awesome. I added some kale on there to fill out the required green veg category for the day.

Smoky "Oh My Goodness" Beans
1 small onion, chopped
2 cloves garlic, minced
1 jalapeno, seeded and minced
1 Tb olive oil
3 cups of your favorite beans, cooked
1 tomato, chopped
3/4 cup vegetable stock
1 tsp salt (unless your stock is salty)
1 Tb maple syrup
1 tsp liquid smoke

In a medium saucepan over medium heat, saute onion, garlic and jalapeno in the oil until onions have softened. Add the beans, tomato, stock, salt, maple syrup, and liquid smoke. Bring mixture to a gentle boil then reduce heat and allow to simmer for 20 minutes uncovered. The liquid should reduce some.

if there is a mofo award for most ambitious poster, it's got to be you. everytime i go to post a comment on someone's blog, you've beat me to it.

these beans look great. they are very similar to the way i cook a pound of dry beans: beans, liquid, liquid smoke, onion and jalapeno, cook until tender then add salt to taste. i'll have to try these, are they sweet from the maple syrup??

yeppers. it's a fact that i usually can't eat anything at a potluck except what i brought. i found a local vegan group that has monthly potlucks though...it's weird to be able to eat anything on a table and not worry about it.

i love beans...even overly soft ones. so good!
